Full Time Chef
$76,600 + Superannuation

Summary
The Chef will oversee the preparation and delivery of high-quality meals across a range of cuisines including Indian, Italian, Indochinese, and contemporary Australian dishes. The position requires strong leadership in supervising kitchen staff, maintaining smooth daily operations, developing innovative menus, and ensuring that all food safety and compliance standards are consistently met. The role also contributes to cost management and continuous improvement in kitchen efficiency.

Key Responsibilities

Kitchen Operations & Food Preparation
• Direct and manage the day-to-day running of the kitchen, ensuring smooth service.
• Prepare and present dishes across Indian, Italian, Indochinese, and modern Australian cuisines.
• Deliver meals with a focus on quality and consistency.
• Ensure dishes are presented to a high standard in terms of flavour, portioning, and appearance.
• Maintain an organised, hygienic, and efficient kitchen environment at all times.
Menu Development & Innovation
• Collaborate with cooks to design and refine menus.
• Introduce new recipes and improve existing dishes based on customer preferences and seasonal produce.
• Develop creative pasta dishes, sauces and fusion options to expand the offering.
• Implement systems to reduce food waste and enhance ingredient utilisation.
Staff Supervision & Training
• Lead and motivate a team of kitchen staff to achieve high performance.
• Assist with recruiting, training, and mentoring cooks and kitchen hands.
• Conduct regular briefings and feedback sessions to ensure team alignment.
• Allocate tasks and manage rosters to ensure smooth kitchen coverage.
Food Safety & Compliance
• Maintain full compliance with workplace health, safety, and hygiene standards.
• Ensure safe handling, storage, and preparation of food at all times.
• Keep accurate records of kitchen checks and safety documentation.
Supplier & Cost Management
• Manage vendor relationships and negotiate supply terms to achieve cost savings.
• Track inventory levels, place orders, and minimise wastage through efficient stock control.
• Monitor kitchen costs and implement improvements to maintain profitability.

Skills & Experience
• Minimum 2 years of professional experience as a chef across multi-cuisine environments.
• Specialised knowledge in pasta, sauces, Indochinese, curries, grilling, and frying techniques.
• Proven ability to lead, train, and manage kitchen teams of 6 or more staff.
• Demonstrated success in reducing waste and improving kitchen efficiency.
• Comprehensive understanding of food safety regulations and compliance requirements.
• Effective communication, leadership, and organisational skills.

Qualifications
• Certificate or Diploma in Commercial Cookery or a related qualification.
• Equivalent professional experience in a restaurant or hospitality environment will also be considered.
