Full Time Cook (Chinese Cuisine)
SALARY RANGE $70,000 - $80,000 + SUPERANNUATION
SUMMARY
Responsible for the planning and organisation of the food to be prepared at Eastern Dumpling House.
As a Full Time Cook (Chinese Cuisine) at Eastern Dumpling House, a renowned authentic Chinese cuisine restaurant, particularly Northern Chinese dishes specializing in handmade dumplings and high-heat wok dishes, you will contribute to delivering an authentic Chinese dining experience for our valued customers. Your role will include:
• Preparation, cooking and presenting meals.
• Demonstrate excellent food preparation practices, portion control and end to end food production.
• Produce handmade dumplings, including dough preparation, fillings, folding techniques, and cooking methods (boiled, steamed, pan-fried)
• Prepare special meals or substitute items.
• Preparing and delivering specialised dishes using stir-frying, steaming, braising, and deep-frying.
• Take responsibility for delivering the highest measures of food production and presentation.
• Ensure proper portion, arrangement, and food garnish.
• Maintain food logs. Monitor the quality and quantity of food that is prepared.
• Assist with stock ordering and monitoring procedures.
• To assist the head chef in the organisation and controlling of all kitchen Operations
• Maintain high standards of food hygiene and health & safety at all times.
• Ensure complete customer satisfaction, through provision and quality, control of Food, hygiene and service adopting a customer-focused approach at all times.
• Training other kitchen staff and apprentices and junior staff as per requirement
• Comply with the OH & S guidelines while working in the kitchen.
• Perform any reasonable duties as required from time to time in order to contribute to the achievement of business aims and objectives.
REQUIRED SKILLS
• Relevant qualification in Commercial Cookery (Certificate III or higher) or equivalent experience
• Experience in preparing authentic Chinese cuisine, particularly Northern Chinese dishes
• Ability to produce handmade dumplings, including dough preparation, fillings, folding techniques, and cooking methods (boiled, steamed, pan-fried)
• Experience operating high-heat wok cooking equipment
• Knowledge of traditional Chinese cooking techniques such as stir-frying, steaming, braising, and deep-frying
• Experience preparing a wide menu selection simultaneously while maintaining consistency and quality
• Strong knowledge of food preparation techniques and culinary best practices
• Ability to work efficiently in a fast-paced, high-volume kitchen environment
• Sound knowledge of food safety standards and kitchen operations
• Ability to work efficiently under pressure
• Good communication and teamwork skills
• Ability to work flexible hours, including weekends and public holidays
• Excellent attention to detail and commitment to quality
• Food handling and safety certification
