About Us
Jack Murat Coffee is a premium Australian coffee producer based in Mareeba, Queensland. Located at one of Australia’s highest-elevation coffee-growing regions, our farm cultivates Red and Yellow Catuai Arabica varietals using ideal tropical conditions and innovative farming techniques.

We process our coffee using washed, natural, and honey methods supported by mechanical harvesting, optical sorting, and a Colombian-designed wet mill system. After secondary dry milling, all beans are stored in temperature-controlled facilities and roasted weekly on-site in Mareeba and in Sydney.

About the Role
We are seeking an experienced Operations Manager (Production) to oversee and coordinate our end-to-end coffee production operations from farm processing to roasting, packaging, and workflow optimisation across our Mareeba and Sydney facilities.

The role requires strong manufacturing and production management experience, with the ability to manage plant/equipment, quality control systems, production targets, and staff performance while ensuring safety, efficiency, and continuous improvement.

Key Responsibilities
• Plan, implement and monitor production strategies, policies, and workflows across processing, dry milling, roasting and packaging.
• Oversee day-to-day production activities to meet targets for output, quality, cost, and timelines.
• Manage and control production equipment, including mechanical harvesters, wet mill systems, optical sorters, dry mill machines, and roasting equipment.
• Coordinate maintenance schedules, operating hours, and procurement of spare parts and tools.
• Monitor production output, batch quality, costs, and wastage, making adjustments to optimise efficiency and minimise costs.
• Oversee the installation and commissioning of new production plant and equipment.
• Direct research and improvements into production methods, roasting profiles, processing techniques and workflow efficiencies.
• Maintain full traceability records for each production lot, including harvest dates, processing method and roasting data.
• Oversee inventory management for coffee, packaging materials and consumables, ensuring optimal stock levels to support weekly roasting schedules.
• Lead and supervise production staff, allocating duties, providing training, and monitoring performance.
• Ensure compliance with workplace health and safety requirements across both farms and roasting facilities.
• Prepare production reports, quality reports, and operational documentation for management.

Requirements
Essential:
• Bachelor’s degree in manufacturing, engineering, agriculture, food technology, business or a related field; OR at least 5 years of relevant production management experience.
• Min 1 year F/T demonstrated experience managing manufacturing or processing operations.
• Experience with production planning, quality assurance and workflow optimisation.
• Strong technical understanding of production equipment and plant operations.
• Proven ability to lead teams and manage staff performance.
• Strong problem-solving, organisational and communication skills.

Desirable:
• Experience in food or beverage manufacturing.
• Knowledge of roasting processes, milling systems, or agricultural production workflows.
• Familiarity with temperature-controlled storage, batch traceability, or quality control systems.
