Salary: $79,500 plus superannuation
Key Responsibilities
• Prepare and cook a wide range of authentic and contemporary Mexican dishes including tacos, burritos, quesadillas, enchiladas, fajitas, nachos, grilled meats, seafood dishes, Mexican rice, beans, salsas, guacamole and other menu items.
• Prepare food using authentic Mexican recipes, spices, herbs and cooking techniques while maintaining consistency in flavour, quality and presentation.
• Prepare fresh sauces, marinades, fillings and accompaniments in accordance with established recipes.
• Monitor food quality, presentation and portion control to ensure high standards are consistently maintained.
• Coordinate daily kitchen operations to ensure efficient food preparation and timely service during busy periods.
• Manage stock levels, place ingredient orders and minimise food wastage through effective inventory management.
• Receive, inspect and store food supplies in accordance with food safety and stock rotation procedures.
• Ensure compliance with food safety legislation, hygiene regulations and workplace health and safety requirements.
• Maintain a clean, organised and efficient kitchen environment.
• Prepare meals to accommodate customers' dietary requirements and special requests where appropriate.
• Inspect kitchen equipment and report maintenance requirements to management.
• Assist in training and supervising junior kitchen staff on food preparation techniques and kitchen procedures.
• Assist in recipe development and standardisation to ensure consistency in quality, flavour and presentation
• Work collaboratively with management to develop new menu items, improve operational efficiency and maintain customer satisfaction.
Essential Requirements
• Demonstrated experience preparing authentic Mexican cuisine in a commercial kitchen.
• Sound knowledge of traditional Mexican ingredients, cooking methods, sauces, marinades and food preparation techniques.
• Experience preparing a variety of Mexican dishes while maintaining consistency in quality and presentation.
• Experience in recipe development and recipe standardisation in a commercial kitchen
• Knowledge of food safety, hygiene and workplace health and safety requirements.
• Experience with inventory management, stock control and food costing.
• Strong organisational, communication and time management skills.
• Ability to perform effectively in a fast-paced commercial kitchen.
