Full Time Chef
SALARY $77,000 - $80,000 Plus Superannuation
Full Time: 38 Hours per week

SUMMARY
To deliver a consistent dining experience that ensures our residents are satisfied with their meal experience and that our meals meet varying nutrition requirement of residents.
The scope of this role encompasses menu design, coordination of all aspects of kitchen operations, training and monitoring staff and sourcing of quality produce

Accountabilities
• Menu design ensuring the dishes are in line with the dietary needs of residents.
• Developing creative menus and recipes to provide a balanced and nutritious diet for residents and help minimize wastage.
• Estimating and budgeting for supplies and other required resources in the kitchen.
• Ordering required food and other inputs to ensure sufficient supply is always available.
• Maintaining the highest standards for consistency, quality, meal delivery, presentation and service.
• Cooking and preparing meals to agreed standards.
• When necessary, demonstrating cooking techniques to cooks and any other kitchen staff in line with paleo, gluten free, vegan and health related dietary requirements.
• Effectively leading and mentoring the junior members of the kitchen team to ensure the team has the relevant skills to deliver exceptional service.
• Monitoring dish preparation always.
• Maintaining high standards of hygiene, cleanliness and safety throughout all kitchen areas always.
• Ensuring ongoing compliance with legislation including HACCP requirements and established business policies and procedures.
• Setting appropriate budgets in accordance with agreed parameters.
• Estimate food purchasing requirements to optimize profitability while ensuring we can cater to varying demands necessary.
• Ensuring the purchases of seasonal ingredients at optimal pricing and from local suppliers where possible.
• Minimizing food costs, waste and theft.
• Assisting to create a harmonious work environment amongst all staff.
• Ensuring all aspects of work, health and safety and operational procedures are always followed, including for suppliers.
• Managing OHS risks and keeping accurate records of all OHS matters.
• Other key performance indicators will be set from time to time as agreed, considering management and business objectives.

Qualifications required
• Trade qualified to Diploma in Cookery or higher.
• Experience in menu planning and costing
• Previous experience of at least 2-3 years as a Chef

Skills and abilities:
• A passion for producing consistent high-quality meals.
• Excellent knowledge and experience in all basic techniques and styles.
• A strong background in utilising fresh local ingredients.
• Knowledge of all food safety standards.
• A good understanding of all financials running a kitchen.
• A professional attitude in the kitchen always.
• A love and passion for developing great nutritious food
• Ability to work in a fast-paced environment.
• Creative eye for detail and 'can do' attitude.
• A team player.

Hours of work
This is a full-time role with the incumbent expected to work at least 38 hours per week. Flexibility to work a combination of weekdays and weekends may be required.
