Full Time Chef
SALARY $78,000 + superannuation
DUTIES
• Plan and develop seasonal menus across breakfast, brunch, and dinner service, incorporating modern Australian cuisine with Taiwanese influences, including signature dishes and options for vegetarian, vegan, and gluten-free dietary requirements.
• Prepare and cook a wide range of dishes across all service periods, including eggs-based breakfasts, fusion brunch items, rice and noodle dishes, premium mains, burgers, salads, and house-made sauces, utilising techniques such as grilling, poaching, sautéing, roasting, and baking.
• Ensure all dishes are prepared and presented consistently in accordance with established recipes, portion control guidelines, and venue presentation standards to maintain a high-quality dining experience.
• Manage and coordinate kitchen operations across breakfast, lunch, and dinner service, ensuring efficient workflow, timely service, and effective coordination with front-of-house staff.
• Supervise and lead kitchen staff, including cooks and kitchen hands, by allocating duties, providing on-the-job training, and maintaining productivity and service standards.
• Monitor food preparation processes to ensure quality control, consistency, and compliance with food safety, hygiene, and regulatory requirements across all service periods.
REQUIRED SKILLS
• Holds an AQF Associate Degree, Advanced Diploma or Diploma (or higher qualification) in a relevant field; or alternatively, Certificate III and Certificate IV in Commercial Cookery from an Australian education provider.
• Minimum one year of full-time, post-qualification work experience in a similar full-service restaurant or café environment in Australia.
• Demonstrated strong culinary expertise in Taiwanese Australian fusion cuisine, with the ability to develop innovative menu items and consistently deliver high-quality dishes across breakfast, brunch, and dinner service.
• Sound knowledge of Australian hospitality regulations, including food safety, hygiene, and workplace compliance requirements.
• Proven capability in kitchen management, time management, and quality control, with the ability to operate effectively in a high-volume, multi-service kitchen environment.
