Salary Range: $75,000 $85,000 plus superannuation

Position Overview
Clique is seeking a skilled and passionate Chef to join our kitchen team. The successful candidate will be responsible for preparing and presenting high-quality Mediterranean and Middle Eastern dishes while maintaining the highest standards of food safety, consistency, and kitchen operations.

Key Responsibilities
Food Preparation and Cooking
• Preparing and cooking a wide range of Mediterranean and Lebanese-inspired dishes including shawarma plates, grilled meats, mezze platters, fakharas, and modern Mediterranean share dishes.
• Preparing all dips, sauces, marinades, and condiments in-house, including items such as labneh, hummus, baba ghanoush, tahini sauces, garlic sauce (toum), and house spice blends.
• Preparing and baking traditional items such as kaak bread and other Mediterranean breads used in service.
• Marinating meats, preparing shawarma components, and ensuring proper seasoning and flavour balance consistent with Mediterranean culinary techniques.
• Ensuring all dishes are prepared and plated according to restaurant standards for presentation, taste, and portion control.
• Monitoring cooking processes and adjusting temperatures, timing, and ingredients to maintain quality.
Kitchen Operations
• Organising and managing daily kitchen operations during breakfast, lunch, and dinner service.
• Coordinating kitchen staff to ensure efficient workflow during busy service periods.
• Monitoring food preparation areas to ensure cleanliness, organisation, and compliance with food safety standards.
• Ensuring all equipment is used safely and maintained in proper working condition.
Menu Development
• Assisting with the development and refinement of menu items inspired by Lebanese and Mediterranean cuisine.
• Testing new recipes and seasonal dishes using fresh ingredients and traditional cooking techniques.
• Contributing ideas for specials and new menu offerings that align with Clique’s concept and brand.
Stock and Inventory Management
• Monitoring stock levels of ingredients and kitchen supplies.
• Ordering fresh produce, meats, herbs, spices, and specialty ingredients required for Mediterranean cuisine.
• Ensuring proper storage, rotation, and minimisation of food wastage.
Food Safety and Compliance
• Ensuring compliance with Australian food safety and hygiene regulations.
• Maintaining high standards of sanitation and cleanliness in food preparation areas.

Skills and Experience Required
• Relevant qualification in Commercial Cookery or equivalent (Certificate IV in Commercial Cookery or higher preferred).
• At least 1 year of relevant work experience as a Chef.
• Experience preparing Mediterranean, Lebanese, or Middle Eastern cuisine is highly desirable.
• Strong knowledge of food safety standards and kitchen operations.
• Ability to work efficiently in a fast-paced environment.
• Strong teamwork and communication skills.
• Passion for quality food and culinary creativity.
