Full time Chef
Salary Range: $76,515 per annum plus the superannuation
Duties:
• Prepare, cook, and present a wide variety of high-quality dishes.
• Manage designated kitchen sections (grill, larder, pans, sauté, hot line) during service to ensure smooth operational flow.
• Complete all mise-en-place, ensuring correct preparation, portioning, labelling, and storage of ingredients.
• Assist in the development of new, creative, and seasonal menu items that reflect the restaurant’s culinary direction and fusion of the food menu items.
• Test, refine, and update recipes to enhance consistency, flavour balance, visual appeal, and cost efficiency.
• Ensure all dishes meet premium standards of taste, portioning, and presentation
• Monitor food quality throughout service, adjusting seasoning, temperature, and timing as required.
• Coordinate daily kitchen operations to ensure timely and efficient service delivery.
• Conduct stock rotation (FIFO), check inventory levels, and assist with ordering of supplies and raw materials.
• Train and guide junior cooks and kitchen hands in cooking techniques, food safety, and preparation methods.
• Transfer advanced cooking methods and knife skills to the team to uplift kitchen capability.
• Mentor staff to enhance productivity, teamwork, and overall kitchen efficiency.
• Follow HACCP and WHS requirements at all times, supported by formal HACCP certification.
• Maintain strict cleanliness and hygiene across all kitchen areas, benches, equipment, and storage zones.
• Conduct regular temperature checks and ensure compliance with safe food-handling standards.
• Produce consistently high-quality meals that meet customer expectations and support repeat business.
• Adjust dishes to meet customer dietary requirements while maintaining quality and consistency.
Skills and Experience:
• Minimum Diploma or Advanced Diploma Level Qualifications in the relevant field.
• Minimum 2 years of experience working in the kitchen.
• Skilled in preparing and cooking a diverse range of dishes in high-volume, fast-paced commercial kitchens is preferred.
• Expertise in modern plating and presentation techniques consistent with premium hotel-level standards.
• Demonstrated ability to produce consistent, high-quality dishes even during peak service periods.
• Proficient in monitoring stock levels, conducting stock rotation, and ensuring correct storage of perishable items is mandatory.
• Knowledgeable in portion control, food costing, and minimising operational waste to support cost efficiency is an advantage
• Demonstrated ability to balance quality and cost control while maintaining high operational standards.
• Competent in maintaining HACCP logs, adhering to hygiene procedures, and following all WHS requirements.
• Excellent communication skills developed through teamwork in busy kitchens and hospitality settings.
• Experienced in mentoring and supervising junior kitchen staff to improve performance and maintain consistency.
• Strong organisational and time-management abilities, ensuring smooth workflow and timely service delivery.
