Cook: Modern Australian & Mexican Cuisine
Australia Hotel Fremantle is seeking experienced cooks (multiple positions) to join our busy kitchen. We are known for classic Australian pub fare and modern, seasonal dishes, and we are expanding our menu to include Mexican cuisine.

Salary: $76,515 to $78,000 p.a. plus super
Key responsibilities
• Prepare, cook, and present a range of Australian, Mexican, and contemporary dishes.
• Maintain consistent quality, flavour, and presentation standards.
• Manage mise en place, stock rotation, and portion control.
• Assist with ordering, receiving, and safe storage of supplies.
• Support the kitchen team and help train junior staff.
• Ensure strict compliance with food safety and hygiene standards.
• Contribute to menu development and daily specials.
Skills and requirements
• Minimum 1 year of full-time experience in a commercial kitchen.
• Certificate III or IV in Commercial Cookery, another acceptable trade qualification, or at least two years of relevant experience in lieu.
• Solid knowledge of modern Australian cuisine and Mexican cookery.
• Strong knife skills and sound understanding of core cooking techniques.
• Excellent time management and the ability to perform under pressure.
• Team-focused with good communication skills.
• Reliable, well organised, and committed to high standards.
• Understanding of stock control and waste reduction.
